The perfect canapés
Nothing says ‘Welcome to our celebration’ like a glass of bubbles and a moorish canapé, served by smiling waiting staff. Sheene Mill have a delicious selection of hot, cold, and sweet canapés made from the freshest of seasonal and (where possible) organic ingredients. You won’t see a chipolata or cheesy pineapple stick in sight because all our canapés are mini taste feasts, in quirky packages, designed to start a conversation, flirtation and celebration. Canapés can be supplemented with more substantial bowl food for a heartier meal or to feed the midnight munchies.
Cheese wedding cake
Cheese wedding cakes – or celebration cakes – have really taken off over the last couple of years. People choose them because they want something a bit different, because they aren’t wild about fruit cake … or because they just love cheese and want to get some visual value out of the cheese course. Decorate a cheese cake well and it’ll be stunning, the centre of attention. Please speak to us regarding your requirements. Wine tasting & selection
1) How much wine do you need for your wedding reception? You can estimate pouring around 5 glasses of wine per bottle and 6 glasses for Champagne poured into flutes. As a rough guide, assume each guest will consume about half a bottle of wine (then add a little for a safety margin). It’s better to have too much rather than too little. 2) How to choose wines to fit with the Season and time of day Warming, fuller-bodied wines are perfect for Winter Weddings (Full-bodied Chardonnays, oak matured Shiraz or Cabernet Sauvignon). Summer Weddings call for lighter, more refreshing wine styles (Riesling, Sauvignon Blanc, Chablis or Rosé and Pinot Noir or a Spanish Garnacha). If your Wedding ‘Breakfast’ is at lunchtime, then people often prefer wines that are lighter in style – anything too alcoholic and you’ll find half of the room nodding off in the afternoon. 3) How to choose a wine for the toast It’s customary to serve sparkling wine for the toast. Open bars… yes or no?
One of the biggest questions we get at The Sheene Mill is whether the bridal couple should have an open bar or not? There is no simple answer to this question. The answer will depend on several things, including: Budget Size of Wedding Expectation Day of the week Accommodation of your guests Evening Buffet The most important of all the above is budget. If there isn’t room within your budget to have an open bar then the answer is quite simple. If this is the case then consider putting slightly more wine on the tables during the meal so that your guests don’t feel hard done to when they only get half a bottle. Tips on choosing wine for the table. If you have room in your budget for an open bar but have no idea how much this could cost you then consider doing the following: Limit / restrict open bar to a set amount Limit open bar to a certain time Restrict the types of drinks made available You may find that for a 100 guest wedding a £1000 bar tab will go a long way and ensure that all of your guests get at least 1 free […]
Cheesecake Sheene Mill style!
We all love a good cheesecake don’t we? But how can we take the cheesecake to the next level? Here is how to make 8 portions of our cheesecake: Ingredients 1 can condensed milk 300g cream cheese 6 table spoons of lemon curd Juice and zest of one lemon 1 leaf gelatin 50g Toasted pine nuts 200g digestive biscuits 20g Demerara sugar 50g brown butter Hibiscus granita 1 orange juiced 1 lemon juiced 500g water 30g hibiscus flowers 75g caster sugar 2 leaves gelatin Cooking Instructions: Cheesecake Combine all ingredients apart from gelatin in a mixing bowl, whisk together until smooth. Meanwhile warm the soaked gelatin in a little lemon juice then add to the cream cheese mixture, Set in the fridge until needed Method for crumb Lightly toast the pine nuts in the brown butter until golden, reserve the remaining butter to fold through the crumb. Blend the digestives until they resemble sand then add the brown sugar, chopped pine nuts. Method for granita Combine the sugar , water and citrus juice in a saucepan and simmer for 5 mins, Take off the heat and add the hibiscus flowers and infuse overnight. Couple’s heartwarming wedding tale is subject of Channel 4 documentary The documentary, called ‘The Wedding Day’, will air the day before Valentine’s Day ‘The Wedding Day’ documentary will be shown on Channel 4 on Monday, February 13, from 10-11pm. A SNEAK PREVIEW OF THE WEDDING DAY The heartwarming story of a woman who took on a picturesque wedding venue her parents had run, and later married her husband there, will be the subject of a new television documentary. Serena Jordan (previously Saunders) took over the Sheene Mill, a stunning 17th century mill in Melbourn, four years ago after her parents divorced in 2006 and the mill ended up in administration. The 28-year-old, who said she was “pretty much raised waiting tables”, said the decision to take on the venue was easy as the building is close to her heart. The tale of the venue take-over, and the wedding, will now be the subject of a Channel 4 documentary, called ‘The Wedding Day’, which will air the day before Valentine’s Day.
