Open bars… yes or no?
One of the biggest questions we get at The Sheene Mill is whether the bridal couple should have an open bar or not? There is no simple answer to this question. The answer will depend on several things, including: Budget Size of Wedding Expectation Day of the week Accommodation of your guests Evening Buffet The most important of all the above is budget. If there isn’t room within your budget to have an open bar then the answer is quite simple. If this is the case then consider putting slightly more wine on the tables during the meal so that your guests don’t feel hard done to when they only get half a bottle. Tips on choosing wine for the table. If you have room in your budget for an open bar but have no idea how much this could cost you then consider doing the following: Limit / restrict open bar to a set amount Limit open bar to a certain time Restrict the types of drinks made available You may find that for a 100 guest wedding a £1000 bar tab will go a long way and ensure that all of your guests get at least 1 free […]

The long-established Rosette scheme recognises successful cooking at different levels across the UK. Success or failure in achieving Rosettes is based on one or more visits by an AA inspector to a hotel or restaurant. Essentially the visit is a snapshot, whereby the entire meal, including ancillary items (when served), is assessed. Less than 10% of restaurants nationwide are of a standard that is worthy of One Rosette and above. This is indeed a huge achievement, and not to be underestimated. AA Rosettes are solely awarded by AA Hotel and Restaurant Inspectors. External influences from hotels, restaurants or other guides are not taken into account when awarding Rosettes. 1) How much wine do you need for your wedding reception? You can estimate pouring around 5 glasses of wine per bottle and 6 glasses for Champagne poured into flutes. As a rough guide, assume each guest will consume about half a bottle of wine (then add a little for a safety margin). It’s better to have too much rather than too little. 2) How to choose wines to fit with the Season and time of day Warming, fuller-bodied wines are perfect for Winter Weddings (Full-bodied Chardonnays, oak matured Shiraz or Cabernet Sauvignon). Summer Weddings call for lighter, more refreshing wine styles (Riesling, Sauvignon Blanc, Chablis or Rosé and Pinot Noir or a Spanish Garnacha). Cheesecake Sheene Mill style!
We all love a good cheesecake don’t we? But how can we take the cheesecake to the next level? Here is how to make 8 portions of our cheesecake: Ingredients 1 can condensed milk 300g cream cheese 6 table spoons of lemon curd Juice and zest of one lemon 1 leaf gelatin 50g Toasted pine nuts 200g digestive biscuits 20g Demerara sugar 50g brown butter Hibiscus granita 1 orange juiced 1 lemon juiced 500g water 30g hibiscus flowers 75g caster sugar 2 leaves gelatin Cooking Instructions: Cheesecake Combine all ingredients apart from gelatin in a mixing bowl, whisk together until smooth. Meanwhile warm the soaked gelatin in a little lemon juice then add to the cream cheese mixture, Set in the fridge until needed Method for crumb Lightly toast the pine nuts in the brown butter until golden, reserve the remaining butter to fold through the crumb. Blend the digestives until they resemble sand then add the brown sugar, chopped pine nuts. On arrival we had our own waiter who looked after us, offered drinks on arrival and moved the tables in the conservatory to suit and added extra sided table for us. Superb and helpful check in-had a few drinks in the beautiful surroundings -staff very amiable and chatty-felt like being in a friends home rather than hotel-retired too our lovely spacious room too get ready for the evening event-food was amazing -taking into account the catering was for 100 or so it was delicious-the 80s band were amazing dance floor packed. Wonderful setting and location, atmospheric especially at night when the ambient lighting is on. Open fires and coziness a plenty. Staff great and nothing too much trouble – even finding a you tube demonstration on how to tie a cravat! The old mill pond is staggering at night with clever lighting . Les M (Cambridge)
We had a great time at Sheene Mill and the food was amazing. Sieg was very attentive and welcoming. The garden is beautiful especially on a summer’s evening. I love the fish dishes. I would definetly recommend it and we will go again soon. Thank you! tammylucy (Huntingdon)
This was a most charming and pleasant surprise, all of the staff were helpful, courteous and pleasant right down to the KP. The food was fabulous – beautifully presented, well cooked and served with pride. The accommodation its self was a great place to relax, chill out and offered an ideal spring board into Cambridge or surrounding countryside for a variety of activities. Andy L (Maidstone)
