Cheesecake Sheene Mill style!
We all love a good cheesecake don’t we? But how can we take the cheesecake to the next level? Here is how to make 8 portions of our cheesecake: Ingredients 1 can condensed milk 300g cream cheese 6 table spoons of lemon curd Juice and zest of one lemon 1 leaf gelatin 50g Toasted pine nuts 200g digestive biscuits 20g Demerara sugar 50g brown butter Hibiscus granita 1 orange juiced 1 lemon juiced 500g water 30g hibiscus flowers 75g caster sugar 2 leaves gelatin Cooking Instructions: Cheesecake Combine all ingredients apart from gelatin in a mixing bowl, whisk together until smooth. Meanwhile warm the soaked gelatin in a little lemon juice then add to the cream cheese mixture, Set in the fridge until needed Method for crumb Lightly toast the pine nuts in the brown butter until golden, reserve the remaining butter to fold through the crumb. Blend the digestives until they resemble sand then add the brown sugar, chopped pine nuts. Method for granita Combine the sugar , water and citrus juice in a saucepan and simmer for 5 mins, Take off the heat and add the hibiscus flowers and infuse overnight. Customer Contact As always at this time of year we are experiencing a very busy time post-Christmas with ceremony booking enquiries, both for this year and several years ahead, and it seems timely to issue a few reminders to help us to help the customers we share: We recommend that when talking to customers, you advise them that the sooner they book with us (which they can do as soon as they have decided on a potential date with yourselves provided they are legally free to marry / form a civil partnership) the more likely it is that the time they want will be available. We already have bookings going in for 2019 /2020! As we take bookings so far in advance people booking at relatively short notice (for example for peak season Saturdays this year) are understandably sometimes disappointed with the times still available, but we have to deal with customers on a first come first served basis. “2 Rosettes for Culinary Excellence”
The long-established Rosette scheme recognises successful cooking at different levels across the UK. Success or failure in achieving Rosettes is based on one or more visits by an AA inspector to a hotel or restaurant. Essentially the visit is a snapshot, whereby the entire meal, including ancillary items (when served), is assessed. Less than 10% of restaurants nationwide are of a standard that is worthy of One Rosette and above. This is indeed a huge achievement, and not to be underestimated. AA Rosettes are solely awarded by AA Hotel and Restaurant Inspectors. External influences from hotels, restaurants or other guides are not taken into account when awarding Rosettes. Open bars… yes or no?
One of the biggest questions we get at The Sheene Mill is whether the bridal couple should have an open bar or not? There is no simple answer to this question. The answer will depend on several things, including: Budget Size of Wedding Expectation Day of the week Accommodation of your guests Evening Buffet The most important of all the above is budget. If there isn’t room within your budget to have an open bar then the answer is quite simple. If this is the case then consider putting slightly more wine on the tables during the meal so that your guests don’t feel hard done to when they only get half a bottle. Tips on choosing wine for the table. If you have room in your budget for an open bar but have no idea how much this could cost you then consider doing the following: Limit / restrict open bar to a set amount Limit open bar to a certain time Restrict the types of drinks made available You may find that for a 100 guest wedding a £1000 bar tab will go a long way and ensure that all of your guests get at least 1 free […]

My Wife and I recently had dinner at the Sheen Mill. It is many years since we last went there. I must say that it was an excellent experience. The food was amazing absolutely fine dining. It had been ten years since we went to The Sheene Mill. We were greeted warmly by the current owner in a warm and friendly manner that you would expect with this type of Restaurant. All members of staff were polite and attentive. Now for the food. We had ordered 2 mains and 2 desserts. My wifes meal was lamb rump and was perfect. She said the best she had ever tasted. I had a piece of the lamb and had to agree. I had the pork which could not be faulte. We went to Sheene Mill on Christmas Eve for a birthday celebration. We have been many times before and it has always been lovely but the food this time was eve better than usual. We booked a table for 11 ladies for my best friends baby shower and it was perfect, Sheene mill could not have been more helpful or accommodating to us. On arrival we had our own waiter who looked after us, offered drinks on arrival and moved the tables in the conservatory to suit and added extra sided table for us. This was a most charming and pleasant surprise, all of the staff were helpful, courteous and pleasant right down to the KP.
